Simple Southwestern Chicken Roll-Ups Recipe

We love Mexican food in our house and I try to plan at least one Mexican inspired dinner per week when I make my monthly menu.

The kids love the flavors and I love that I can sneak in some extra vegetables without them knowing it. This is a super easy dinner for a busy night when you’re short on time.

I’ve even prepared the roll-ups in the morning, refrigerated them all day, and then popped them in the oven later that evening.

I love that you can add other ingredients to change it up- rice, black beans, guacamole…the possibilities are endless.

Southwestern Chicken Roll-Ups

Bake at 350 for 20 mins

Ingredients
  

  • 2 cans fat free refried beans
  • 1 jar chunky salsa, divided
  • 2 cups chopped & cooked chicken
  • 1 pkt taco seasoning
  • 2 cups shredded sharp cheddar cheese
  • 16 flour tortillas

Instructions
 

  • Combine refried beans, 1/2 cup of salsa, chicken, taco seasoning, & 1/2 cup cheese in large bowl.
  • Spoon equal portions of mixture down center of tortillas.
  • Fold ends up, fold sides in, and roll the tortilla up.
  • Lay tortillas seam side down in 9×13 baking dish.
  • Top with remaining cheese.
  • Bake at 350 for 20 minutes.
  • Serve topped with salsa.
