Matt has been begging me to find a new recipe for red beans and rice. His mom made a delicious version with ground beef when he was a kid but none of our kids will eat it so I never make it.
After experimenting a few times I finally hit on a recipe that we all enjoy. The kids loved this one and we had absolutely no leftovers! Plus it’s so easy to throw together on a busy day and that’s a huge plus for me!
1 lb polska kielbasa sausage, sliced
2 cans red beans, drained & rinsed
1 can spicy black pepper diced tomatoes
1/2 cup diced onion
pinch red pepper flakes, to taste
2 cups white rice, cooked
1. Combine sliced sausage, beans, tomatoes, onion, and red pepper flakes in crockpot.
2. Cook on HIGH for 3 hours.
3. Serve over white rice
This is one recipe that has gone into our regular rotation as a family favorite. The kids are already bugging me to make it again soon.
