Easy One-Pot 8 Can Taco Soup Recipe

I love soup. I love it a lot and I love soups that are easy to make. There’s nothing better in the winter months than a warm delicious soup to make you feel cozy inside.

This recipe is about as easy as it gets. I found the original online somewhere a long time ago and added my own twist to fit my family’s tastes. 

One-Pot 8 Can Taco Soup Recipe

Ingredients:

1 can black beans, drained and rinsed

1 can pinto beans, drained and rinsed

1 can fire roasted diced tomatoes, drained

1 can Rotel tomatoes with green chiles

1 can sweet corn, drained

1 can cream of chicken soup

1 can green enchilada sauce

1 can chicken broth

1 pkt taco seasoning

2 cups cooked & diced chicken

Directions:

Combine all ingredients in large pot.

Heat until warm, stirring occasionally.

Serve with shredded cheese, sour cream, and tortilla strips.

Every one in my family devoured this soup. I took no time at all to make and it was delicious. If you don’t like spicy food  then you can substitute regular diced tomatoes for the Rotel. We enjoy spicy foods so the Rotel was perfect for us.

I was on a time crunch when I made this for dinner so I even used 2 packs of Tyson’s Grilled & Ready Southwestern Chicken Strips from the fridge section and just diced them. The soup turned out perfect!
