Life around these parts has gotten super busy very fast! The school year is in full swing complete with PTA meetings, School leadership team meetings, Girl Scouts, Football, Cheerleading, Dance…..not to mention homework, chores, and the daily running of a household.
I’ve been diligent with my meal planning but I needed to find a few fast weeknight meals to add to the rotation for those nights when there just isn’t a moment to spare.
Pillsbury Grands! Biscuits provides a plethora of easy 30-minute or less dinner recipes that are sure to please even the pickiest family members.
I plan to keep all of the ingredients on hand specifically for those nights when time just gets away from me. Not only do the kids approve of the delicious dinners, Matt is pleased that we’re not paying for fast food, and I’m happy that we’re not eating junk. It’s an all around win.

1 can (16.3 oz) Pillsbury Grands! Refrigerated Biscuits
1 cup pizza sauce
2 cups shredded mozzarella cheese
1 pkg sliced mini pepperonis
1. Press each biscuit into a 6-inch round. Place on large greased baking sheet.
2. Top each round with pizza sauce, cheese, and pepperoni.
3. Bake at 375 for 10-15 minutes until bottoms are golden brown and cheese is melted.
These Mini Pepperoni Pizzas were a hit with the kids. They enjoyed assembling their own mini pizzas and watching them bake. Plus, it required little to no clean up and only 4 ingredients! That’s a recipe this busy mom appreciates.
Matt and I got a little more creative with our mini pizzas. We added a few different toppings such as sausage crumbles, mushrooms, and diced ham.
The result was delicious! Next time I plan to try using pesto sauce instead of the pizza sauce for a little different flavor. My tummy is grumbling just thinking about it.
The great part about this recipe is you can switch it up and try different combinations so you ever get bored or tired of eating the same thing!
