Easy Crockpot Mexican Chicken Soft Tacos Recipe

We love Mexican food. It’s about the only thing, other than pasta, that the whole family agrees on for dinnertime. So I have a collection of different Mexican recipes and a family favorite happens to be the chicken soft tacos.

Over the years I’ve tried a bunch of soft taco recipes but this one is always my go-to and the kids love it.

Mexican Chicken Soft Tacos Recipe


1 lb chicken breasts
3 cups salsa
1 pkt taco seasoning
1 can refried beans
1 bag shredded lettuce
2 cups shredded Mexican blend cheese
1 pint grape tomatoes, halved
1 jar taco sauce
1 cup sour cream
1 avocado, diced
1 pack flour tortillas


1. Place chicken in bottom of crockpot and sprinkle taco seasoning over top.
2. Pour salsa on top of chicken.
3. Cook on Low for 6 hours or High for 3 hours.
4. Shred chicken and divide evenly on tortillas.
5. Top with lettuce, cheese, refried beans, taco sauce, sour cream, tomatoes, and avocados.

It’s really so easy to make and perfect for those busy days when there just isn’t enough time for a complicated dinner recipe.

Sometimes I add a little ranch dressing instead of the sour cream just for a little extra zest or I add brown rice and make it a burrito.

The kids enjoy assembling their own soft taco and they can pick and choose which toppings they want.
