I love Stuffed Peppers but I don’t love all the prep work and I really don’t love the moans and groans that come out of my kids when I make Stuffed Peppers.
So on a whim one day I decided to toss together a Stuffed Pepper soup in the crockpot and give it a try.
I’ve made this a few times now and I’ve tweaked it each time until I’m finally happy with it.
Crockpot Stuffed Pepper Soup
Ingredients
- 2 lbs ground beef, cooked and drained
- 2 bags (14oz each) Birds Eye Peppers & Onions Fajita Vegetable Medley
- 2 cans Hunts Fire Roasted Diced Tomatoes with Garlic
- 4 cans (8oz each) tomato sauce
- 4 cups beef broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- 2 cups cooked white rice
Instructions
- Combine all ingredients in crockpot and mix well.
- Cook on high for 3.5 hours or low for 7 hours.
