Fast & Easy Beef Enchiladas Supreme Recipe

Well the time of year has come for me to start trying out some new recipes in preparation for Back-to-School time.

I need easy, fast, and yummy dinners that take me less than half an hour to get on the table. I came across this recipe awhile back and tweaked it to fit our family’s tastes.

I pre-cooked the hamburger meat the night before and by doing that I was able to have this dinner on the table in 30 minutes.

Everyone enjoyed it and I will definitely add this one to our regular rotation.

Ingredients:

2 lbs ground beef

8 flour tortillas (6-7″)

2 cans mild enchilada sauce (10oz each)

1 can diced tomatoes- I used Spicy Roasted Red Pepper tomatoes

1 sweet pepper, diced

2 cups Colby Jack shredded cheese

8 oz sour cream

Directions:

Brown ground beef and drain. 

Add diced tomatoes and diced sweet pepper; mix well.

Pour 1/2 can of enchilada sauce into meat mixture and stir.

Pour second can of enchilada sauce into bottom of 13×9 baking dish.

Dip tortillas, one at a time, into sauce to coat both sides.

Divide beef mixture evenly into center of each tortilla and roll up.

Place seam side down in baking dish. 

Cover with foil and bake at 350 for 15 minutes.

Remove foil; spoon reserved 1/2 can enchilada sauce over top & top with cheese.

Continue baking uncovered for 10 minutes.

Serve with sour cream.
