Life is very busy these days with 5 kids in school and various sports. We are on-the-go pretty much every single night of the week. It can be a real challenge to gather everyone around the dinner table for a healthy dinner when we are so short on time.
I’m always trying to cram family dinner into a very small window of time before we rush off in opposite directions to get kids to practices and games. I refuse to sacrifice a healthy family dinner just because we’re busy and active.
Over the last year I have been compiling a list of our family favorite recipes that are perfect for busy nights. Today I’m sharing a gluten free pasta recipe that everyone in my household loves.
I’ve switched to using gluten free products when I can and finding a 4-pack of Barilla® Gluten Free Penne Pasta at BJ’s Wholesale Club was the highlight of my grocery shopping trip.
The Barilla Gluten Free Penne Pasta is a good gluten free pasta made with corn and rice and non-GMO ingredients. It is certified Gluten Free and produced on dedicated gluten free production lines.
With a delicious taste and texture, it tastes like regular pasta and will create a meal your whole family will enjoy!
2 cups cooked & chopped chicken
1 box Barilla® Gluten Free Penne Pasta, cooked
1 can corn, drained
1 can diced tomatoes, drained
1/2 cup chopped onion
2 cups shredded Monterrey Jack cheese
1 pkt ranch dressing mix
2 cups BBQ sauce
1. In large bowl, combine diced tomatoes, onion, corn, pasta, chicken, ranch dressing, and BBQ sauce.
2. Spread mixture in 13×9 casserole dish sprayed with cooking spray.
3. Top with shredded cheese.
4. Bake at 350 for 15-20 minutes.
My whole family loved this gluten free pasta recipe and it made me happy to be able to serve my family a healthy dinner despite being short on time. Family dinner is so important to me- it’s a time to connect with my kids and hear about their days.
We get such a small amount of time with them during the week, being able to sit around the table and listen to their funny stories about school is really invaluable. We have a few hard and fast rules for family dinner that really calms the chaos and gets everyone into a better frame of mind for the rest of our evening.
1- We turn off all electronics- no phones, no television, no tablets, no games. Our dining room table is a technology-free zone every evening when we gather for dinner.
2- We put the dogs outside- nothing interrupts dinner time more than a puppy nose in your lap while you’re trying to eat. So all 3 pups are sent out to the backyard while we eat.
3- We stay at the table until everyone is done- nobody gets excused until the last person is finished eating.
