Easy Stuffed Pepper Casserole

With 4 kids getting older it’s becoming harder to find meals that everyone enjoys and will eat while still maintaining my standards for offering my family healthy dinners. The kids would be perfectly happy with frozen chicken nuggets and macaroni every single night but I’m pretty sure someone would revoke my mom card for feeding my kids that on a regular basis. I have a master list of dinners that we all enjoy but quite honestly we are all tired of the same old dinners. A person can only eat the same 10 meals in rotation for a few weeks before the mere thought of Chicken Soft Tacos will inspire eye rolling and groaning. We have reached that point in my house. I spent the last few weeks on a hunt for some new and different dinner options to try. It’s the perfect time to change up my meal plan with the start of fall, football, and crockpot season upon us.

The biggest requirements I have for dinner options is ease of preparation, low cost, and the inclusion of vegetables. Feeding 3 hungry kids, a football playing teenager, and a husband takes a lot of food every night. I tend to gravitate towards preparing one-dish casseroles, crockpot meals, and dinners including rice. Rice is one thing every member of my family agrees on- we all love it. I’m always on the hunt for new dishes made with rice because I know the kids will eat it without complaint even if the dish includes green vegetables.

Ingredients:

1-2 pounds ground beef (I used 2 pounds)

3 small green peppers, chopped

2 cups Success® White Rice, cooked

1 jar (24oz) spaghetti sauce

2 cups shredded cheese, divided (I used Mild Cheddar)

Directions:

1. Cook meat and drain.

2. Return meat to pan, add peppers and cook over med-low heat until peppers begin to turn tender.

3. In large casserole dish, stir together rice, spaghetti sauce, and 1 cup of cheese.

4. Add in beef mixture and stir to combine.

5. Top with remaining cheese.

6. Bake at 350 for 25 minutes. Let stand 5-10 minutes before serving.

Fast & Easy Beef Enchiladas Supreme

Well the time of year has come for me to start trying out some new recipes in preparation for Back-to-School time. I need easy, fast, and yummy dinners that take me less than half an hour to get on the table. I came across this recipe awhile back and tweaked it to fit our family’s tastes. I pre-cooked the hamburger meat the night before and by doing that I was able to have this dinner on the table in 30 minutes. Everyone enjoyed it and I will definitely add this one to our regular rotation.

Ingredients:

2 lbs ground beef

8 flour tortillas (6-7″)

2 cans mild enchilada sauce (10oz each)

1 can diced tomatoes- I used Spicy Roasted Red Pepper tomatoes

1 sweet pepper, diced

2 cups Colby Jack shredded cheese

8 oz sour cream

 

Directions:

Brown ground beef and drain. 

Add diced tomatoes and diced sweet pepper; mix well.

Pour 1/2 can of enchilada sauce into meat mixture and stir.

Pour second can of enchilada sauce into bottom of 13×9 baking dish.

Dip tortillas, one at a time, into sauce to coat both sides.

Divide beef mixture evenly into center of each tortilla and roll up.

Place seam side down in baking dish. 

Cover with foil and bake at 350 for 15 minutes.

Remove foil; spoon reserved 1/2 can enchilada sauce over top & top with cheese.

Continue baking uncovered for 10 minutes.

Serve with sour cream.

Lemon Shrimp Pasta Salad

We are a family of pasta salad lovers. We eat a ton of pasta salad in the summer time because it is too hot to even think about turning on the oven to cook. Our temps are already in the mid 90’s which means my oven is officially turned off until September. I’ve been scouring my cookbooks and Pinterest for new pasta salad recipes to try out this summer and I stumbled on this one. I adapted it to turn it into something my whole family would enjoy and it’s turned into a family favorite.

Ingredients:

 

1 lb frozen cooked salad shrimp, defrosted

1 box whole wheat rotini pasta

1 bottle Zesty Italian dressing

4 T lemon juice

1 cucumber, sliced

1 pint grape tomatoes, halved

1 bag cheese crumbles 

 

Directions:

 

1. Cook noodles as directed; drain.

2. Combine noodles with Zesty Italian dressing in large bowl.

3. Add cucumber, shrimp, and tomatoes. Toss to combine.

4. Add cheese crumbles and lemon juice. Toss lightly.

5. Chill for 1-2 hours before serving.

Spicy Mexican Grilled Tilapia

I made the best grilled tilapia for dinner last week. It was probably the best tilapia we’ve ever had and it literally took me minutes to toss the dinner together. Matt grilled the fish and I made the topping. I try to have fish on the menu at least once a week but we get tired of the same old recipes. I have to spice it up every once in awhile. This one was super simple and very fast! I’d definitely serve this when we have friends over for dinner. Plus- my kids ate every single bite without complaining about the vegetables!

 Ingredients:  

 

1 bag frozen Tilapia fillets, defrosted as directed

1 bag frozen corn

2 cups spicy salsa

2 cups shredded Mexican cheese blend

1 carton sour cream  

 

Directions:  

 

Grill tilapia fillets on medium heat until fish is white and flaky, approximately 10 minutes.

Cook frozen corn as directed on package.

Mix corn and salsa together in bowl.

Top each tilapia fillet with shredded cheese, enough to cover.

Spoon a heaping amount of the corn/salsa mixture over top of cheese.

Top with sour cream.

Fast & Easy Weeknight Fish Tacos

Do you ever have those evenings when you get home late, attempt to start dinner, and then realize you are missing an ingredient….or three? That happens to me more often than I’d like to admit- mainly because I have a pack of hungry wild animals living in this house who scavenge for food every chance they get. I’m not kidding. I saw my oldest eating tuna straight out the can the other day. There went dinner for that evening- it was supposed to go into my tuna noodle casserole. So I’ve learned to keep the ingredients for several quick and easy dinners hidden so I have an alternative dinner on those crazy nights. One of those dinners is Fish Tacos- the kids love them and I can throw them together quickly.

Ingredients:

 

1 box crispy fish tenders

1 pkg tortillas

1 bag steamed sweet corn

1 cup chunky salsa

2 cups shredded cheese- I used Fiesta blend

8 oz sour cream

 

Directions:

 

1. Cook fish tenders according to directions.

2. Mix cooked sweet corn with salsa.

3. Place 2 fish tenders end to end in each tortilla.

4. Top with corn mix, cheese, and sour cream.

 

The fish tenders took 23 minutes to cook and I had the dinner on the table in 30 minutes. Matt was unsure about a fish taco made with crispy fish tenders but the corn salsa mix really made it delicious. My whole family cleaned their plates and even asked for seconds- do you know how rare it is for me to make something that every single person in this house not only eats but actually likes? It’s a magical moment indeed.
