Fast & Easy Weeknight Fish Tacos

Do you ever have those evenings when you get home late, attempt to start dinner, and then realize you are missing an ingredient….or three? That happens to me more often than I’d like to admit- mainly because I have a pack of hungry wild animals living in this house who scavenge for food every chance they get. I’m not kidding. I saw my oldest eating tuna straight out the can the other day. There went dinner for that evening- it was supposed to go into my tuna noodle casserole. So I’ve learned to keep the ingredients for several quick and easy dinners hidden so I have an alternative dinner on those crazy nights. One of those dinners is Fish Tacos- the kids love them and I can throw them together quickly.

Ingredients:

 

1 box crispy fish tenders

1 pkg tortillas

1 bag steamed sweet corn

1 cup chunky salsa

2 cups shredded cheese- I used Fiesta blend

8 oz sour cream

 

Directions:

 

1. Cook fish tenders according to directions.

2. Mix cooked sweet corn with salsa.

3. Place 2 fish tenders end to end in each tortilla.

4. Top with corn mix, cheese, and sour cream.

 

The fish tenders took 23 minutes to cook and I had the dinner on the table in 30 minutes. Matt was unsure about a fish taco made with crispy fish tenders but the corn salsa mix really made it delicious. My whole family cleaned their plates and even asked for seconds- do you know how rare it is for me to make something that every single person in this house not only eats but actually likes? It’s a magical moment indeed.

Easy 7-Minute Leftover Spaghetti Boats

My family loves spaghetti. I’d say it’s one of our favorite meals. I always make a ton because it’s an economical dinner to make in bulk and there is always enough to have leftovers the next day. Unfortunately my family is not big on leftovers- for some reason the same dinner the next night does not seem as appealing to them. Freaks. So I have to get creative.

Ingredients:

 

Leftover spaghetti (noodles & meat sauce already combined)

1 box garlic cheese texas toast

2 cups shredded mozzarella cheese

 

Directions:

 

1. Place texas toast on foil lined baking sheet and cook for 3 minutes at 425.

2. Heat spaghetti in microwave for a couple of minutes- don’t overheat it.

3. Top each texas toast slice with a scoop of spaghetti and sprinkle with cheese.

4. Continue baking for additional 5 minutes until cheese melts.

The whole family raved about these! The kids had no idea they were eating leftovers and everyone complained because there were no seconds. Next time I make these I will be making double the texas toast for sure! Can’t beat this for a 7 minute dinner recipe- not to mention a great way to stretch your spaghetti dinner into two nights.

Chicken Salsa Nacho Scoops

A couple of months ago I was desperate to find some new dinner recipes that were quick to prepare and yummy enough to entice the kids to actually eat. We were all getting tired of my tried and true favorite dinner recipes and nothing was really capturing my interest. I’ve seen people make something similar to this Nacho Scoops recipe as an appetizer at parties but in my aforementioned quest to find some fun dinners that my kids will eat without complaint I decided to turn it into a dinner recipe. And it worked. My kids scarfed this dinner down so fast that I had some serious concerns about choking.

Ingredients:

 

1 bag Tostidos Scoops chips

2 cups chicken, cooked and chopped

2 cups shredded cheese (use your favorite kind- I used Colby Jack)

1 jar chunky salsa 

1 cup diced tomatoes

1 container sour cream

 

Directions:

 

1. Lay scoops out on foil lined baking sheet.

2. Top with half of shredded cheese and then chicken.

3. Cover with another layer of shredded cheese.

4. Bake at 350 for 10-12 minutes until cheese melts.

5. Top with sour cream, salsa and tomatoes.

This dinner was so delicious! We had no leftovers and the kids begged me to make it again the next day. I have also made this using ground beef with taco seasoning instead of making the typical taco dinner. The possibilities are endless…and yummy.

Easy Cajun Chicken Fettuccine Alfredo {Red Lobster Copycat}

I’m always on a quest to discover new and delicious options for quick weeknight dinners. We are so busy these days that I don’t have time for extensive and time consuming prep work. I need fast and I need yummy or these little creatures won’t eat. One of my absolute favorite things to eat is the Cajun Chicken Fettuccine Alfredo from Red Lobster. When I was pregnant with Zoey I consumed it by the pound. Seriously. The hostess at the front desk knew me by name. That was embarrassing. I’ve never found a recipe that was as good as Red Lobster, affordable to make at home, and easy enough to do on a weeknight. After experimenting and trying different ingredients I have finally done it. I have made a Cajun Chicken Fettuccine Alfredo that is delicious and rivals Red Lobster. 

 

No seriously, I mean it. I served it at a large family function and was reprimanded by my mother-in-law for spending too much money on take out from Red Lobster. I took great delight in telling her it was home made. It’s the little things, y’all. Of course it helped that I found the Red Lobster Cheddar Bay Biscuit mix at Wal*Mart. Those biscuits….they were sooooo good! They tasted just like the real ones from the restaurant. I will never serve this pasta dish without the biscuits ever again.

Ingredients:

 

3-4 boneless chicken breasts, cooked & diced*

Zatarains Blackened Seasoning, to taste*

1 lb Fettuccine noodles

2 jars Prego Homestyle Alfredo sauce

1 pint grape tomatoes, halved

 

*I chose to use 2 packs of the refrigerated Tyson’s Southwestern Style Chicken strips instead to save time.

*I found the Zatarains Blackened Seasoning at Wal*Mart

 

Directions:

 

1. Cook noodles as directed on package. 

2. Meanwhile, combine diced chicken and Zatarains blackened seasoning in pot. The Zatarains blackened seasoning has some serious kick to it so start out with a little bit and increase it as you go. 

3. Heat chicken over low to medium heat until blackened seasoning coats heated chicken, about 4-5 minutes stirring frequently.

4. Once chicken is heated through, add halved grape tomatoes and stir frequently until they soften, about 2-3 minutes.

5. Add both jars of Alfredo sauce to chicken and tomatoes and continue to heat over low to medium heat.

6. Serve sauce mixture over hot fettuccine noodles with Cheddar Bay Biscuits.

Doesn’t that look amazing? The taste is even more amazing, especially for a dish that used no time intensive, home made ingredients. From prep to table, this dinner took me 15 minutes- and that includes making the biscuits!

Loaded Chicken Tater Tot Casserole

I made a casserole the other day that every single person in this house loved. They raved about it. They went back for seconds…some of them went back for thirds. Mase licked his plate clean. And every one asked me to make it every week.

 Say what? It’s rare that every person loves what I make for dinner. There is usually at least one person complaining about something- they don’t like the sauce, they don’t like corn, the don’t want to eat Babe the pig, they don’t like the crispy topping. Someone is always whining. But this recipe- it’s clearly magical. Clearly.

Loaded Chicken Tater Tot Casserole

 

 Ingredients:

1 bag crispy crowns tater tots
2 cups cooked & chopped chicken
1 cup bacon, cooked & crumbled
2 cups shredded cheddar cheese
8 oz sour cream
1 cup tomato, diced

*Note: To save time and prep for myself, I used 2 bags of Tyson Grilled & Ready fully cooked Southwestern style chicken breast strips and diced them up. I also used Oscar Meyer real bacon pieces instead of cooking my own bacon.

 Directions:

1. Place a single layer of crispy crown tater tots in the bottom of a greased 13×9 baking dish.
2. Bake at 400 for 15 minutes.
3. Remove from oven; layer chopped chicken, bacon, and 1 1/2 cups of shredded cheese over top of tater tots.
4. Return to oven and bake at 400 for an additional 10 minutes.
5. Serve with sour cream, remaining shredded cheese, and tomatoes.

 Just look at all this yum! Is your mouth watering yet? Believe it or not, this tastes even better than it looks! Matt compared it to TGI Friday’s Loaded Baked Potato Skins. High praise, indeed.

 
 

 Don’t count on having leftovers when you make this because there won’t be any! You might have to fight for a second helping, Hunger Games style. Or maybe that’s just my house….
