Easy Cheesy Chicken Manicotti

We are a pasta lovin’ family. I’m quarter Italian so I’m convinced pasta sauce runs in my veins. I like all types of pasta and my kids do too. I’m perfectly happy with a yummy meatless pasta dish but I live in a house full of carnivores so I have to take typical meatless pasta recipes and doctor them up some to fit our needs. This Chicken Manicotti dish started out as a cheese manicotti and I almost added ground beef but at the last minute decided to go with shredded chicken instead. And it was delicious!

CM1

Ingredients:
2 cups cooked & chopped chicken
1 jar (24oz) spaghetti sauce
1 tsp garlic salt
2 tsps Italian seasoning
1 carton (15oz) ricotta cheese
1 box manicotti shells, uncooked
2 cups shredded mozzarella cheese

Directions:
1. Spread 1/3 of spaghetti sauce in bottom of 13×9 baking dish.
2. Mix ricotta cheese with chicken, Italian seasoning, and garlic salt.
3. Scoop mixture into gallon size ziploc bag and cut off one bottom corner.
4. Gently squeeze bag to fill each manicotti shell.
5. Place filled shells on top of spaghetti sauce in pan.
6. Pour remaining spaghetti sauce over top.
7. Cover with shredded cheese.
8. Cover pan with foil and bake at 350 for 1 hour.

The kids loved this new and improved pasta dish. Even Matt raved about it and he’s pretty much a meat and potatoes kind of guy. I’ll definitely make this one again!

Cheesy Chicken & Broccoli Tater Tot Bake

I’m a huge fan of any casserole or bake that involves tater tots. I just love them. I have a serious addiction to anything potato- french fries, loaded potato skins, tater tots…I love them all. Plus it’s amazing how I can serve anything topped with tater tots and my kids think it’s amazing. I’m not sure they even noticed the broccoli in this dinner, they were blinded by the tater tots.

CBTT1

Ingredients:

1 bag frozen tater tots
1 can cream of chicken soup
1 can cheddar cheese soup
1 bag (16oz) frozen broccoli
2 cups cooked & chopped chicken
2 cups shredded sharp cheddar cheese

Directions:

1. Pour both soups in saucepan and add one can of water.
2. Stir and heat.
3. Once heated, add broccoli and let simmer.
4. Pour broccoli and soup mixture in bottom of 13×9 baking dish sprayed with cooking spray.
5. Add chicken over mixture.
6. Top with tater tots.
7. Sprinkle with cheese.
8. Bake at at 350 for 25-30 minutes.

Doesn’t that look delicious? All that yummy broccoli smothered with tater tots and cheese! The kids loved it and we had zero leftovers, which is always how I judge the success of any dinner in this household. I’ll definitely make this one again.

Easy French Bread Pizzas

When we want pizza but don’t have a coupon I do the French Bread pizzas at home to save money. We can make them exactly how we want them and everyone is happy. With our family we usually do a variety of different toppings so everyone can pick and choose what they want. These are super easy and super fast for those busy nights!

FBP1a

Ingredients:
2-3 Loaves of French Bread**
2 jars pizza sauce
4 cups shredded mozzarella cheese
Toppings of your choice

Directions:
1. Cut french bread in half, length wise and place open face on baking sheet.
2. Spread 1/4-1/2 jar pizza sauce on each.
3. Top with your favorite toppings.
4. Sprinkle with 1/2 to 1 cup of cheese.
5. Bake at 500 degrees for 5-7 minutes.
6. Cut into 2 inch wide strips.

**The amount of bread you use totally depends on your family size. For our large family I generally get 3 loaves.

FBP2a

I try to grab the loaves of French bread at Wal*Mart when they go half off so I only pay 50 cents per loaf. That makes this a really cheap meal! The kids love pepperoni and sausage on their pizzas. Matt and I usually go all out and add olives, mushrooms, peppers, onions, ham, and diced tomatoes in addition to the pepperoni and sausage. I’ve figured the trick to crispy french bread pizzas is to bake them at a higher temp for a shorter time. These came out perfect!
