The Easiest Crockpot Chicken & Gravy

One of Matt’s favorite dinners is chicken and gravy over mashed potatoes. I only made it occasionally because it was time consuming and not something I could do quickly on a busy night. Then I decided to try and make it in the crockpot. My first couple of attempts were….not great. But I kept working on it and finally found a combination that is perfect.

Ingredients:
3-4 chicken breasts (mine were frozen)
1 pkt Pioneer Brand Country Gravy (2.75oz)
1 can cream of chicken soup
1 cup water
1 cup milk
1/4 tsp pepper

Directions:
1. Combine gravy packet, soup, water, milk, and pepper in bottom of crockpot.
2. Add chicken breasts and coat with gravy mixture.
3. Cook on Low for 8 hours or High for 4 hours.
4. Shred chicken and stir to combine.
5. Serve with mashed potatoes or rice.

This was so delicious. The gravy was creamy and smooth, not lumpy or watery (which is how my first 2 attempts came out). You can serve this with mashed potatoes or with rice. I’ve served it both ways and I prefer it with mashed potatoes. The kids loved this and we had zero leftovers.

Crockpot Meatball Ravioli Bake

As I’ve been working on transitioning to a monthly meal planning system I’ve found myself gravitating to a lot of crockpot meals. They are perfect for our busy lifestyle. I’ve also been trying to use up all the ingredients I have in the freezers, fridges, and pantries each month. This dinner, which ended up being one of our favorites, was one that I threw together with ingredients leftover at the end of the month!

Ingredients:
1 bag (32oz) frozen meatballs
1 bag (25oz) frozen cheese filled ravioli
1 can fire roasted spicy black pepper diced tomatoes, undrained
1 jar (45oz) favorite spaghetti sauce
2 cups shredded mozzarella cheese

Directions:
1. Pour frozen meatballs in bottom of crockpot.
2. Add frozen ravioli.
3. Top with diced tomatoes.
4. Pour jar of spaghetti sauce over top.
5. Top with shredded cheese.
6. Cook on High for 2.5-3 hours.

Doesn’t that look good? Smothered in cheese- that’s the way to my kids’ hearts. My kids ate every single bite of this and we had no leftovers. That’s how I know a new recipe is a keeper!

Crockpot Chicken Bacon Ranch Sandwiches

My kids love anything served on bread. Seriously. I can slap pretty much anything on a nice Ciabatta roll and they’ll eat it happily. So I combined 3 of their favorite ingredients- chicken, ranch dressing, and bacon- into one delicious sandwich. And man, it was good y’all!

Ingredients:
4-6 boneless chicken breasts (I used frozen)
16oz cream cheese, full fat
2 packets dry ranch dressing mix
12oz bacon, cooked and crumbled

Directions:
1. Place chicken breasts in bottom of crockpot.
2. Add cream cheese and ranch dressing mix.
3. Cook on High for 4 hours.
4. Shred chicken, return to crockpot, & stir to combine.
5. Add crumbled bacon and mix well.
6. Serve on warm Ciabatta rolls.

I can’t wait to make these again. I’ve added them to my monthly meal rotation after the kids asked for them for 4 straight days.

Crockpot 3 Meat Pizza Casserole

I’ll be honest, my family will pretty much eat anything that involves more than one kind of meat and pizza. I’m pretty sure that’s their love language. Bunch of carnivores! So when I was desperate for a dinner last month and didn’t have time to run to the grocery store I had to shop the pantry. It turned out fantastic and I’ll definitely make it again! Thanks goodness for stocking some extras in the pantry and second fridge!

Ingredients:
1 lb Italian sausage, cooked
1 lb ground beef, cooked
1/2 cup onion, chopped
8 oz of ziti noodles, cooked
3 jars (14oz each) pizza sauce
3 tsp Italian seasoning
1 pkg (8oz) sliced pepperoni
2 cups shredded mozzarella cheese

Directions:
1. In large bowl mix all ingredients together except mozzarella cheese.
2. Pour mixture in bottom of crockpot.
3. Top with shredded cheese.
4. Cook on Low for 3 hours.

**I used a crockpot liner to cut down on the clean up. If you don’t use one of those then spray your crockpot with cooking spray.

I really can’t say enough about this dinner, it was fantastic. And we had enough leftovers for Matt to take for lunch the next day, which rarely happens around here!

Easy & Delicious Crockpot Meatball Stroganoff

One thing that Matt is always asking me to make is Meatball Stroganoff. He loves it but I don’t have time to make his favorite meatball dish from scratch these days. I tinkered around with my original recipe and converted it into a great crockpot dinner. Matt loved it! Even the kids ate it and they’re not that fond of noodles that aren’t covered in some kind of cheese sauce.

Ingredients:

2 Tbsp A1 Steak Sauce 
1 can cream of mushroom soup
1 can beef broth
1 pkt Lipton’s onion soup mix
2 lbs frozen meatballs
8 oz sour cream
1 box (16oz) favorite pasta noodles

Directions:

1. Mix mushroom soup, broth, onion soup mix, and A1 sauce in crockpot.
2. Add frozen meatballs.
3. Cook on LOW for 7 hours or HIGH for 3.5 hours.
4. Add sour cream and mix well.
5. Cook pasta noodles and add to crockpot; mix well.
6. Continue cooking for additional 30 minutes.

I will definitely be adding this dinner to my regular meal rotation. It was delicious and fed my whole family with enough leftovers for Matt to take for lunch the next day.
