Simple Southwestern Chicken Roll-Ups

We love Mexican food in our house and I try to plan at least one Mexican inspired dinner per week when I make my monthly menu. The kids love the flavors and I love that I can sneak in some extra vegetables without them knowing it. This is a super easy dinner for a busy night when you’re short on time. I’ve even prepared the roll-ups in the morning, refrigerated them all day, and then popped them in the oven later that evening. I love that you can add other ingredients to change it up- rice, black beans, guacamole…the possibilities are endless.

Ingredients:

2 cans fat free refried beans
1 jar chunky salsa, divided
2 cups chopped & cooked chicken
1 pkt taco seasoning
2 cups shredded sharp cheddar cheese
16 flour tortillas

Directions:

1. Combine refried beans, 1/2 cup of salsa, chicken, taco seasoning, & 1/2 cup cheese in large bowl.
2. Spoon equal portions of mixture down center of tortillas.
3. Fold ends up, fold sides in, and roll the tortilla up.
4. Lay tortillas seam side down in 9×13 baking dish.
5. Top with remaining cheese.
6. Bake at 350 for 20 minutes.
7. Serve topped with salsa.
