One of the ways I consistently sneak extra vegetables into my kids’ diets is to hide them in dinners like burritos or tacos. Even my most picky child will not bother opening up a burrito to inspect the ingredients inside.
Sometimes being a mom means you have to be a little sneaky. I love this recipe because not only does it have corn and black beans, it also is made with brown rice. Yet the kids love the burritos! That’s a win in my house.
Crockpot Corn Salsa & Black Bean Chicken Burritos Recipe
Ingredients
- 2 cans black beans, drained and rinsed
- 2 cans sweet corn, drained
- 1 pkg taco seasoning
- 4 chicken breasts
- 2 cups salsa
- 3/4 cup water
- 2 cups brown rice, cooked
- flour tortillas
- 2 cups shredded Mexican blend cheese
- 8 oz sour cream
Instructions
- Combine beans, corn, taco seasoning, and water in bottom of crockpot and mix well.
- Place chicken breasts on top and spread salsa over chicken.
- Cook on HIGH for 4 hours.
- Shred chicken in crockpot.
- Add cooked brown rice and stir to combine.
- Serve on warm tortillas with shredded cheese and sour cream.
There is a lot of flavor packed inside these burritos. Sometimes I like to top mine with guacamole too. This is a great recipe for busy days- just toss the ingredients in the crockpot and go about your day!
