Easy Crockpot Corn Salsa & Black Bean Chicken Burritos Recipe

One of the ways I consistently sneak extra vegetables into my kids’ diets is to hide them in dinners like burritos or tacos. Even my most picky child will not bother opening up a burrito to inspect the ingredients inside.

Sometimes being a mom means you have to be a little sneaky. I love this recipe because not only does it have corn and black beans, it also is made with brown rice. Yet the kids love the burritos! That’s a win in my house.

Ingredients
  

  • 2 cans black beans, drained and rinsed
  • 2 cans sweet corn, drained
  • 1 pkg taco seasoning
  • 4 chicken breasts
  • 2 cups salsa
  • 3/4 cup water
  • 2 cups brown rice, cooked
  • flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 8 oz sour cream

Instructions
 

  • Combine beans, corn, taco seasoning, and water in bottom of crockpot and mix well.
  • Place chicken breasts on top and spread salsa over chicken.
  • Cook on HIGH for 4 hours.
  • Shred chicken in crockpot.
  • Add cooked brown rice and stir to combine.
  • Serve on warm tortillas with shredded cheese and sour cream.
