Baked BBQ Chicken Tacos For A Quick And Easy Dinner

My husband and I sat down over the summer break and had a long talk about what we wanted to change for the upcoming school year. One of the biggest sticking points that was bothering both of us was the lack of family dinners. We have 5 kids, in 4 different schools, with multiple activities during the week. It’s made family meals really obsolete in our household and both of us made the decision to implement changes and focus on simple dinners. Our goal is to have a family dinner at the table with the television off and no phones, tablets, or games at least 4 nights a week. In order for us to meet this goal with our busy schedule I need to have a variety of easy dinner recipes to choose from. 


My kids love tacos of any kind and I love any recipe that lets me use Farm Rich® Smokehouse Dry Rub Smoked Chicken that I found in the freezer section at Walmart as the main ingredient because not only is it a quality cut of meat that’s smoked for hours and full of flavor, it’s also high in protein and easy to prepare. This is one of those easy flavorful dinner recipes that I can just throw together when I are short on time and want to avoid the drive thru line. I keep the ingredients on hand during those busy weeks when I know I’m going to have issues getting flavorful dinners on the table. The kids can eat an entire pan of these by themselves!

3 cups Farm Rich® SmokehouseDry Rub Smoked Chicken
1 1/2 cups BBQ sauce
1 pkg Birds Eye Steamfresh® Flavor Full Barbeque Sweet Corn
2 cups shredded Mexican blend cheese
10 Stuff n’ Stand Taco shells
1 cup sour cream
Chopped green onions to garnish

1. In large bowl, combine cooked chicken and BBQ sauce.
2. Line taco shells up in a 11×7 baking dish sprayed with cooking spray.
3. Divide the chicken mixture evenly among taco shells.
4. Spoon cooked corn evenly over top of chicken mixture.
5. Top tacos with cheese.
6. Bake at 400 for 10 minutes, or until cheese is melted.
7. Garnish with sour cream and green onions.



My family devoured this quick and easy dinner.     Wow barbecue sweet corn! The stuff that never makes it north of the border! LOL Why do they call it sweet corn? Is there non sweet corn? (a Canadian wants to know) We just call it corn here (either niblet or peaches and cream)

    • The Barbecue Sweet Corn is SOOOOO good! I can eat the whole bag all by itself. I don’t know why they call it sweet corn. Now I’m pondering that. Haha!
