Baked Ziti With Sausage & Peppers

We are a family of pasta lovers. My kids would be over the moon ecstatic if I would just serve them pasta 7 nights a week. Don’t think I haven’t considered it! I try to find ways to sneak in some vegetables with all the pasta though. I’ve discovered they will pretty much eat any vegetable if it’s mixed with pasta and sauce…and covered in cheese! This Baked Ziti recipe is one that I’ve had for awhile but I did some tweaking to make it a little healthier. My kids ate every bite with not one complaint or question about what the green stuff was. That’s a win!

Ingredients:

1 box whole wheat ziti noodles

1 lb sausage, sliced

1  jar (28oz) chunky vegetable spaghetti sauce

1 can Italian diced tomatoes

1 jar sliced mushrooms

1 green pepper, diced

1 carton ricotta cheese

 8oz shredded mozzarella cheese

1/2 cup shredded parmesan cheese

Directions:

1. Cook pasta as directed.

2. Drain pasta, reserving 1/2 cup of pasta cooking water.

3. Mix spaghetti sauce, sliced sausage, ricotta cheese, tomatoes, peppers, mushrooms and reserved 1/2 cup cooking water in large bowl. 

4. Add pasta and 1/2 cup of the mozzarella cheese to bowl; mix lightly.

5. Spoon into 9×13 baking dish sprayed with cooking spray.

6. Sprinkle with remaining mozzarella cheese and parmesan cheese.

7. Cover with foil. Bake for 30 minutes at 350.

8. Uncover and bake additional 10 minutes.

This Baked Ziti was so delicious that Matt didn’t even whine that pasta is “kid food”. When I can get all the people in this house to actually eat the dinner I make with nary a complaint out of any of them it’s like the trifecta of motherhood and deserves a hearty pat on the back!
