Best Ever Crockpot Hearty Vegetable Soup

There is nothing that makes me happier than curling up in my comfy fleece pants, watching football, and eating a bowl of delicious hot soup on a Sunday in the Fall and Winter. That is pretty much my idea of the perfect day. So I’m always on the hunt for new or improved soup recipes to add to the Sunday rotation. This crockpot Veggie Soup sounded so yummy but being that I have a husband and teenage son who are decidedly carnivorous I had to tweak and add to the original version.

Ingredients:

2 pounds ground beef; cooked and drained

2 cans (15oz each) mixed vegetables, drained

1 can (15oz) Lima beans, drained

1 can (15oz) Sweet Corn, drained

1 can (15oz) Sliced Carrots, drained

4 cans (15oz each) Hunts Spicy Black Pepper Diced Tomatoes, undrained

2 cans (15 oz each) Tomatoes & Okra, undrained

1 cup Beef Broth

1 cup water

Directions:

Combine all ingredients in crockpot.

Cook on Low for 4 hours.

 Doesn’t that look delicious? My crew raved about this soup and it made a ton. We were able to get dinner for 2 nights plus Matt took it for lunch twice. I will definitely be making this again!
