Easy Cajun Chicken Fettuccine Alfredo {Red Lobster Copycat}

I’m always on a quest to discover new and delicious options for quick weeknight dinners. We are so busy these days that I don’t have time for extensive and time consuming prep work. I need fast and I need yummy or these little creatures won’t eat. One of my absolute favorite things to eat is the Cajun Chicken Fettuccine Alfredo from Red Lobster. When I was pregnant with Zoey I consumed it by the pound. Seriously. The hostess at the front desk knew me by name. That was embarrassing. I’ve never found a recipe that was as good as Red Lobster, affordable to make at home, and easy enough to do on a weeknight. After experimenting and trying different ingredients I have finally done it. I have made a Cajun Chicken Fettuccine Alfredo that is delicious and rivals Red Lobster. 

 

No seriously, I mean it. I served it at a large family function and was reprimanded by my mother-in-law for spending too much money on take out from Red Lobster. I took great delight in telling her it was home made. It’s the little things, y’all. Of course it helped that I found the Red Lobster Cheddar Bay Biscuit mix at Wal*Mart. Those biscuits….they were sooooo good! They tasted just like the real ones from the restaurant. I will never serve this pasta dish without the biscuits ever again.

Ingredients:

 

3-4 boneless chicken breasts, cooked & diced*

Zatarains Blackened Seasoning, to taste*

1 lb Fettuccine noodles

2 jars Prego Homestyle Alfredo sauce

1 pint grape tomatoes, halved

 

*I chose to use 2 packs of the refrigerated Tyson’s Southwestern Style Chicken strips instead to save time.

*I found the Zatarains Blackened Seasoning at Wal*Mart

 

Directions:

 

1. Cook noodles as directed on package. 

2. Meanwhile, combine diced chicken and Zatarains blackened seasoning in pot. The Zatarains blackened seasoning has some serious kick to it so start out with a little bit and increase it as you go. 

3. Heat chicken over low to medium heat until blackened seasoning coats heated chicken, about 4-5 minutes stirring frequently.

4. Once chicken is heated through, add halved grape tomatoes and stir frequently until they soften, about 2-3 minutes.

5. Add both jars of Alfredo sauce to chicken and tomatoes and continue to heat over low to medium heat.

6. Serve sauce mixture over hot fettuccine noodles with Cheddar Bay Biscuits.

Doesn’t that look amazing? The taste is even more amazing, especially for a dish that used no time intensive, home made ingredients. From prep to table, this dinner took me 15 minutes- and that includes making the biscuits!
